Sundried Tomato Butter Recipe

Ingredients:

  • 1 package grape tomatoes (1 pint)

  • 1 packed tbsp fresh basil, chopped 

  • 1/4 tsp packed fresh oregano, chopped

  • Salt (to taste)

  • Olive oil, enough to cover tomatoes in jar/storage container

  • 2 sticks butter (16 tbsp)

  1. To prepare sunless dried tomatoes, pre-heat oven to 250 degrees

  2. Line a baking sheet with parchment paper

  3. Slice tomatoes in half lengthwise and place sliced half facing upwards on parchment paper

  4. Sprinkle salt evenly over tomatoes to preference

  5. Bake for ~2 hours and 45 minutes (until moisture removed, time may depend on your specific oven)

  6. Add dehydrated tomatoes to a mason jar or airtight container 

  7. Add fresh herbs, additional salt (pinch) and olive oil 

  8. Mix well and allow time for tomatoes/herbs to come together in olive oil (ideally 12-24 hours in refrigerator until tomatoes soften, if oil solidifies set out at room temperature prior to preparing butter)

  9. To prepare sundried tomato butter, bring 2 sticks of butter to room temperature 

  10. Remove tomatoes from oil and combine well with butter (save flavored oil for another recipe!)
